You would want two if you plan to run both Bipolar supplies off the same transformer or three if you want each bipolar supply to be completely isolated.

Can you run both bipolar psu's off of one trafo? I was under the impression you required three.
Will one 25 VA trafo for 2 bipolar psu's be ok?
