Can i use for this diodes in this power supply UF4004 diodes?
Please confirm

The i have a question about the mounting position of the trimmers

On the assembled picture, one trimmer is mounted with the screw on right side,
the other trimmer is mounted with the screw on the left side

The black PCB shows the trimmers must be mounted with the screws on the same side

LCBPS/LCDPS don't use discrete diodes to rectify. The only diodes on the boards are there to protect from reverse bias conditions. Just about any standard silicon diode will do there.

The trimmers are connected as rheostats so you can orient them either way and they will still work.
