"Hi all and happy new year!

I am new to the world of DIY, but want to get involved with a DAC project. I have been an audiophile for quite some time and am now retired and have the time for a project such as this although
I would say I have NO soldering skills. My wife does from her days as a jewelry maker.

I also don't know what to order and how to start. My current system uses a Mach2 mac mini with pure music as the player software fed into an Empirical Offramp 3 super clock 4 via usb. I feed a rca spdif
into my Meridian pre/pro. I also run aes/ebu 110 ohm to other parts of the house from the offramp as all three outputs are hot at the same time.

The third output on the offramp is I2S I think. From what I read, this is best if a dac has that input.

Please guide me on what I should order and how to get started. I am sure there are other items I need for the project as well. Perhaps there is a list available somewhere?

Start by reading the guide, it's found on the BIII or documents page. It includes a fairly complete list of what you need.
