Would the 2x10 pole male DIL header Mouser Cat. 10-89-7203 be a match for the female header (Mouser 538-15-44-5820) suggested by Russ

That's the unlatched version of the one in the guide (Page 38). Both are 0.1" pitch C-Grid series, so compatible with eachother.
