Anyone have suggestions on a connector or terminal (Phoenix or any other) to use for I2C on the B2 instead of soldering?

I use Molex C-Grid connectors for that.

If you use a pin header there are many .1" female connectors that will work. I often use AMP/Tyco MTA .100" IDC connectors (which equire a little T-handle tool for insertion) and some ribbon cable. But just about any .1" connector will work just fine. I use the feed through type. If you go the IDC route make sure your ribbon wire size matches the connector (AWG).
