I got a 2nd hand unused volumite not assembled and the sticker on the firmware bag says "volumite for buffalo (all version)" and I am not sure it will work on the Buffalo II I just bought. It looks like it is the firmware for Buffalo I

I think you got the right firmware for Buffalo II. My firmware bag (bought together with buf II) said the same. Also there may be a reason why it reads: "all versions" :-)

It'll work fine for a stereo setup. For dual mono, you might need a newer firmware version. It all depends on the firmware version that's on the chip.

It says "All Versions" because it works for all versions of Buffalo current sold (Buffalo-II Stereo and Buffalo-II Dual-Mono). It will also work for Buffalo-32S. It's a small label to put all that text on :) FWIW: I keep a pile of chips programmed with Buffalo Volumite code on my desk where I ship, as this is mainly what people order.
