I notice that the WM8804 has a demphasis output and the WM8471 has a demphasis input but there does not appear to be a means to hook the two together. Is the demphasis flag passed via the I2S data?

The deemphasis pin is exposed on the Opus. In hardware mode you simply wire it from the WM8804. The truth is there are so few CDs with emphasis encoding that it is not generally worth bothering with, but it is there is you want it.
