Hi,

I was wondering if it would be possible to configure a TXPS regulated output for 5V 2A? I was thinking of using it for a Squeezebox.

You can actually use a LCDPS for the Squeezebox. It states 2A for the supply, but actually only draws something like .5 Amps.

Can you explain how the voltage is adjusted? Would you use only one side?

Yes, just one side. You adjust the output voltage by turning the screw head on the trimmer pot on the board, while monitoring voltage at the output terminals.
