What would be the best way to get x 2 SPDIF outputs from the nanoDIGI (no I2S output I'm afraid) into the BIII. I'm thinking of using the BIII in 4 channel mode so each channel uses 2 DACS.

The ES9018 can only use two channels of S/PDIF at a time. You would need to use two external S/PDIF to I2S converters.
