But shouldn't it work with 7 bits for 8ch., that is without paralleling inputs and outputs?

What you really asking about is what the ES9018 is capable of. :)

I have never used anything but 6 bit true diff for 8 channel output. So i can't really say(without doing the same sort of looking you could do) if 7bit would work or not.

I would suggest reading the Differential mode paragraph, section 8 channel settings. It's on page 34 of the latest version. That plus requesting the 9018 datasheet might help you to understand what is going on. To my knowledge 7+True will never work for 8 channels.

According the ESS, both 6-it and 7-bit would support 8-channel. 8-bit, half of the channels are not used and 9-bit half of that half are not used.

That depends on what you mean by channels(analog or digital input?) and not being used (shutdown because its redundant or coupled?) :). What really occurs in most (well for stereo especially) cases as that some analog channels become shared - or driven by a single digital source. :)

What is very important here is to understand which digital inputs are utilized for each mode and which analog outputs should be summed (for stereo it is all of them all the time).

The way I understood the post at diyaudio is that there is no internal remapping of the inputs in both 6 and 7 bit. Thus 8-channel analog input and 8-channel analog output

Sure absolutely true, but only for 7bit if it is pseudo diff - which would sound like crap for the poster because they are using only one end of the analog output and pseudo diff must be treated as a differential signal to work correctly.
